July 4th

Before I knew it, it was the weekend again and a holiday weekend!!  I know that sounds insane, and quite nice actually, but time seems to fly by here.  Maybe its because there is always something to do, people are always busy.

Thursday night Glynnis and I went over to a new spot on the block, The Pig and the Sprout (http://www.pigandsprout.com/). We had been before for a drink and I wasn’t a fan of the menu but I knew they had a burger and I was craving a burger….which I have been craving quite a bit lately.  I like my burgers medium RARE.  Not what YOU think I think medium rare is, but actually medium rare.  And it NEVER comes out medium rare…never.  Well I’ll be damned, this one did and it was delicious!!!!

We kicked off the holiday weekend with drinks at Union Station; myself, Glynnis, Kathryn and one of Kathryn’s friends, Elizabeth.  We sat and chatted and ended up being there much longer than planned.  But it was fun!  Then we headed out in search of food and ended up at Whiskey Tango Foxtrot right down the street.  I am not a fan, but they do have a great burger….so a burger it was (and it’s never medium rare either).

I woke up Saturday with a slight headache, but not too bad.  I spent the day being lazy, doing laundry, nothing special.  Saturday night Glynnis, Jess and I went over to Larimer Square for dinner at Osteria Marco (http://www.osteriamarco.com/).  I ordered the apple and fennel salad and then the rabbit and it was definitely good, but not amazing.  We did have a fantastic assortment of cheeses as an app!

On Sunday we had reservations for a fancy brunch at the Brown Palace’s Ellyngton’s (http://www.brownpalace.com/dining/restaurants/champagnebrunch).  Think brunch at The Jefferson.  There was a seafood station, carving stations, sushi, pastries, dessert stations, muffins, bacon, an omelet station….I had 3.5 plates and cleaned them. But alas….no photos.  Sad face.

We were supposed to leave brunch and head to a 4th of July festival….but brunch put us down and a nap was on tap.  And that nap set the tone for the rest of my holiday weekend.  Too much people time…and food….and alcohol.  So no fireworks for this girl.  I spent the rest of the weekend watching Grace & Frankie on Netflix.  Go watch it if you haven’t.
